硝酸盐与亚硝酸盐广泛存在于人们的饮食之中,其安全问题一直是公众关注的焦点。本文综述了饮食中硝酸盐与亚硝酸盐的来源及其与人类疾病之间的关系,以期增进公众对硝酸盐与亚硝酸盐的认识,这将有助于引导人们合理饮食。 Nitrate and nitrite are widely existed in diet and its security has attracted more and more attention of the people. We reviewed the sources of nitrate and nitrite in diet and the relationship between them and human diseases in order to raise the awareness of nitrite and nitrite in diet. This will help to guide people of a reasonable diet.
